Preheat oven to 375 degrees F. Prepare a 12-count muffin tin by spraying it with nonstick cooking spray.
In a medium mixing bowl, combine ham, chicken, barbecue sauce and barbecue rub.
Roll out both crescent sheets and divide the barbecue mixture in half and spread evenly across both crescent dough sheets. Sprinkle with Treasure Cave Gorgonzola Crumbles, using the reserved 1½ ounces.
Starting from the long end of each dough sheet, roll dough into a cylinder, cutting each roll into 6 even portions (making 12 total rollups). Gently press each rollup into the prepared muffin tin, sprinkle the tops with the remaining Treasure Cave Gorgonzola Cheese Crumbles and place into the preheated oven.
Bake for 25 minutes or until the center of each rollup is baked through and the top is golden in color.
Once baked, top with sliced green onions and serve.
