Caramelized Onion Dip with Blue Cheese

Ingredients

  • 2 tablespoons butter

  • 4 cups diced sweet onions
  • 1 teaspoon salt
  • 1 cup sour cream
  • ¾ cup mayonnaise
  • 1 teaspoon garlic powder
  • ½ tablespoon Worcestershire sauce
  • Juice from half of a lemon
  • 4 ounces Treasure Cave Crumbled Blue Cheese Crumbles
  • Chives

Directions

  1. Start by melting a large knob of butter in a pan over medium-high heat and add 4 cups of diced sweet onions to the pan. This will reduce a LOT. Add a large pinch of salt and cook until all the moisture is gone from the pan.
  2. Reduce heat to low and keep stirring every 5-10 minutes until onions become a nice brown caramelized color. This will take about an hour. When finished, put them in the fridge to cool down.
  3. In a large bowl mix 1 cup of sour cream, ¾ cup of mayonnaise, garlic powder, Worcestershire sauce and lemon juice. Next, fold in some of the caramelized onions and Treasure Cave Crumbled Blue Cheese. Save some for garnish.

  4. Add a few large pinches of minced chives and give it one more light mix. Let it chill in the fridge until it’s time to serve. 

  5. Transfer to a pretty bowl and garnish with more onions, Treasure Cave blue cheese and chives. Serve with your favorite chips and enjoy.
