Directions
Start by melting a large knob of butter in a pan over medium-high heat and add 4 cups of diced sweet onions to the pan. This will reduce a LOT. Add a large pinch of salt and cook until all the moisture is gone from the pan.
Reduce heat to low and keep stirring every 5-10 minutes until onions become a nice brown caramelized color. This will take about an hour. When finished, put them in the fridge to cool down.
In a large bowl mix 1 cup of sour cream, ¾ cup of mayonnaise, garlic powder, Worcestershire sauce and lemon juice. Next, fold in some of the caramelized onions and Treasure Cave Crumbled Blue Cheese. Save some for garnish.
Add a few large pinches of minced chives and give it one more light mix. Let it chill in the fridge until it’s time to serve.
Transfer to a pretty bowl and garnish with more onions, Treasure Cave blue cheese and chives. Serve with your favorite chips and enjoy.
