Blue Cheese Kentucky Hot Brow

Ingredients

  • ⅓ cup Treasure Cave Blue Cheese Crumbles
  • 1 cup whole milk
  • 1 tablespoon butter
  • 1½ tablespoon flour
  • 4 slices thick-cut toasted sourdough bread
  • 1 pound thick-cut turkey
  • 8 slices crispy bacon
  • 1 tomato, sliced

Directions

  1. Make Treasure Cave Blue Cheese mornay sauce: Melt butter over medium heat, add flour and stir with a wooden spoon for 60 seconds to make a roux. Slowly whisk in milk, then constantly whisk until thickened, around 2-3 minutes. Add Treasure Cave Blue Cheese crumbles and mix until combined. Season with salt and pepper.
  2. Season tomato slices with salt and pepper, then broil for 2-3 minutes.
  3. Assemble hot browns by layering toast with turkey, tomato slices and a generous amount of mornay sauce.
  4. Broil sandwiches for 5 minutes.
  5. Top with 2 slices of bacon and serve.
