Blue Cheese Chicken Casserole

Ingredients
3-4 cups Tater Tots or potato crowns
3 tablespoons unsalted butter
Green onion (greens and whites separated)
2 stalks of celery, thinly sliced
3-4 minced garlic cloves
Salt and pepper to taste
1 cup frozen diced potatoes (or use the remaining Tater Tots)
1 cup frozen mixed vegetables (corn, carrots, green beans, etc.)
8 ounces softened cream cheese
½ cup sour cream
4-5 ounces Treasure Cave Blue Cheese (save about 1 ounce for garnish)
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoon fresh or dried dill
2 teaspoon Italian seasoning
1 can of chopped tomato and peppers
2 tablespoons of your favorite hot sauce
Half or a whole shredded rotisserie chicken (depending on how many you plan to feed)
Directions
Follow package instructions and bake Tater Tots.
Add butter to a large skillet to slightly coat the edges of the pan. Add onions and celery to cook until softened.
Add garlic powder, salt and pepper, frozen potatoes and vegetables. If you are going for more of a meal than an appetizer, cook for about 6-8 minutes.
Add cream cheese, sour cream and blue cheese. Set aside remaining blue cheese for garnish.
Add seasonings, tomato peppers, hot sauce, scallion greens or parsley and cooked chicken. Toss to coat in the sauce.
Spread the mixture in the pan.
Remove Tater Tots from the oven and assemble on the casserole.
Top with remaining blue cheese and hot sauce if desired.
Bake for about 20 minutes until it's bubbly and delicious-smelling.
Remove from oven to slightly cool, serve and enjoy!
