Bacon and Blue Cheese Dip

Ingredients

For dip:

  • 6 ounces softened cream cheese
  • ¼ cup mayonnaise
  • ½ cup Treasure Cave Blue Cheese Wedge, crumbled
  • 2-3 slices of bacon, chopped
  • Green onions, for topping (optional to mix in as well)

For smashed potatoes:

  • 1 pound baby potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • ½-1 teaspoon garlic powder
  • ½ teaspoon black pepper

Directions

To make dip:

  1. In a small bowl, add in the cream cheese and mayonnaise. Mix well.
  2. Add in the crumbled blue cheese, bacon, and green onions if you are using them. Mix well and serve!

To make potatoes:

  1. Bring a large stockpot of salted water to a boil. Add baby potatoes. Let cook for about 20 minutes. Cook until fork tender, about 20 minutes. Strain and let dry for about 5-10 minutes.
  2. Preheat oven to 400 degrees F.
  3. Line a sheet pan with parchment paper and lay potatoes out. Use a cup or something with a flat surface to flatten each potato enough so it doesn’t break but is flat.
  4. Drizzle with olive oil and sprinkle with salt, pepper and garlic powder.
  5. Bake for 20 minutes. I broiled them for about 2-3 minutes at the end for extra crunch. Make sure to watch closely.
  6. Enjoy!
