Crumbled Gorgonzola Cheese
Ingredients
- 1/4 cup mayonnaise
- 2 teaspoons lemon juice
- 3/4 cup Treasure Cave® Crumbled Gorgonzola Cheese, divided
- 1 tablespoon olive oil
- 1/2 cup orange pepper, thinly sliced
- 1/2 cup yellow onion, thinly sliced
- Salt and pepper
- 4 veggie burgers
- 4 English muffins, toasted
- 1 avocado, sliced into 12 slices
Directions
- In a small bowl, combine the mayonnaise, lemon juice and 1/4 cup of the Treasure Cave® Crumbled Gorgonzola Cheese. Mix well and set aside.
- In a non-stick skillet, heat the olive oil over medium-high heat. Add the peppers and onion and sauté until soft. Then, season with salt and pepper and set aside.
- Grill the veggie burgers according to the package directions.
- To assemble the burgers, place the English muffin bottoms on a serving plate. Spread each with the gorgonzola mayonnaise. Then, top with the pepper onion mixture, followed by a burger. Top each with 3 slices of avocado and sprinkle with the remaining Treasure Cave® Crumbled Gorgonzola Cheese. Place the muffin tops upon each and serve warm.
