Georgia Black & Blue Cheese Catfish Sandwich

Ingredients

  • 2 pounds catfish filet
  • 1 tablespoon blackened seasoning
  • 1 tablespoon unsalted butter
  • Half a small lemon (juice)
  • 2 tablespoons Treasure Cave Crumbled Blue Cheese
  • 2 loaves soft hoagie bread
  • 1 tablespoon mayonnaise
  • 3-4 ounces bibb lettuce
  • 4 tomato slices of tomato
  • 4 red onion slices

Directions

  1. Pat catfish dry with a paper towel.
  2. In a large skillet, add butter and heat to medium-high heat.
  3. Sprinkle catfish filet with seasoning and blacken a hot skillet until crispy. The fish should cook about 3-4 minutes per side.
  4. Right before fish is finished cooking, top with Treasure Cave Crumbled Blue Cheese and lemon, allowing the cheese to melt through.
  5. Remove fish from pan and assemble additional ingredients.
  6. To assemble sandwich, toast a soft hoagie roll in same pan the catfish was cooked in and spread mayonnaise on both sides of the bread.
  7. Add lettuce, tomato and catfish.
  8. Add remaining slice of bread to the top of the sandwich and serve immediately.
