4 ounces chopped, frozen spinach, thawed with the liquid squeezed out
½ cup sour cream
⅓ cup Treasure Cave Crumbled Blue Cheese
⅓ cup Treasure Cave Crumbled Gorgonzola Cheese
Black pepper to taste

Directions
Preheat oven to 400 degrees F.
While oven is preheating, prepare caramelized onions. Melt butter in a sauté pan over medium heat. Reduce heat to medium-low, add onions and cook for about 25 minutes, stirring frequently, until lightly browned. Add a splash of water to the pan if onions are drying out too quickly before they’re done.
When onions are caramelized, add garlic and cook for one more minute.
While onions are cooking, prepare bacon. Place on a baking sheet lined with foil and bake in the 400-degree oven for 10-15 minutes until crisp. Blot with a paper towel to remove grease and dice finely.
Reduce oven heat to 350 degrees F.
In a bowl, combine cream cheese, sour cream, spinach, bacon, caramelized onions, black pepper, Treasure Cave Crumbled Blue Cheese and Crumbled Gorgonzola Cheese. Warm, caramelized onions will make it easier to mix.
Transfer to an oven-safe dish and top with a sprinkle of Treasure Cave Crumbled Blue Cheese and Crumbled Gorgonzola Cheese. Bake for 20 minutes. For a toasty top, broil for 1-2 minutes.
