Minnesota Buffalo Chicken Tater Tot Hot Dish with Crumbled Gorgonzola Cheese

Ingredients

  • 3 cups cooked chicken, shredded
  • 1 28-ounce bag Tater Tots
  • 8 pieces of bacon
  • 1 small yellow onion, diced
  • 1 cup celery, diced
  • 1 10½-ounce can cream of chicken soup
  • 1 cup plain Greek yogurt
  • ¾ cup ranch dressing
  • ¾ cup buffalo sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon pepper
  • 1 cup shredded cheddar cheese
  • 5 ounces Treasure Cave Crumbled Gorgonzola Cheese
  • ¼ cup green onions, diced

Directions

  1. Place the uncooked bacon on a baking sheet lined with foil and bake at 400 degrees F until crisp (about 10-12 minutes). Pat to remove grease and finely dice.
  2. In a large bowl, add chicken, 2 cups Tater Tots, half of the bacon crumbles, celery and onion and mix until well combined. Add cream of chicken soup, buffalo sauce, ranch dressing, garlic powder, onion powder, pepper, shredded cheddar cheese and half a cup Treasure Cave Crumbled Gorgonzola Cheese. Mix until well combined
  3. Lightly coat the bottom of a 9x13-inch dish with cooking oil, then evenly spread buffalo chicken mixture onto the bottom. Top with even rows of Tater Tots.
  4. Bake at 400 degrees F for 30 minutes, remove from oven and top with the remaining bacon and Gorgonzola cheese crumbles. Return to oven for 5 minutes until the cheese has melted.
  5. Top with green onions and enjoy!
