New England Baked Stuffed Lobster with Blue Cheese

Ingredients
2 2-pound whole lobsters
3 tablespoons melted butter
1 cup panko breadcrumbs
3 tablespoons Treasure Cave blue cheese wedge
1 sprig dill
2 scallions
Salt and pepper to taste
Directions
Boil lobsters (15 minutes per pound).
While lobsters are cooking, mix breadcrumbs, dill, scallions, ¾ of Treasure Cave blue cheese wedge, half of the butter and salt and pepper to taste.
Once lobster is cooked, separate the meat from shells, reserving the tail shell.
Chop and mix the claw and knuckle meat into bread crumb stuffing.
Cut the tail meat and tail shell in half and place the stuffing mixture on top of tail meat and shell.
To garnish, top with remaining melted butter and Treasure Cave blue cheese and broil on high for 3 minutes or until breadcrumbs are golden brown
