Endive Boats with Gorgonzola Cheese Yogurt Dip

Ingredients

  • ½ cup plain yogurt
  • ¼ cup mayonnaise
  • 1 clove garlic, minced
  • 2 tablespoons lemon juice, freshly squeezed
  • ½ cup Treasure Cave Crumbled Gorgonzola Cheese
  • Pinch of kosher salt
  • 3 endives, leaves removed
  • 1 small apple, sliced thinly
  • 2 tablespoons chopped chives

Directions

  1. Mix yogurt, mayonnaise, garlic, lemon juice and salt in a bowl.
  2. Fold in Treasure Cave Crumbled Gorgonzola Cheese.
  3. Place a tablespoon of the dip in each endive “boat,” top with a slice of apple and sprinkle with chives.
  4. Serve right away.
