1 ½ cups all-purpose flour, plus more for your work surface
½ teaspoon kosher salt
10 tablespoons cold unsalted butter, cubed
4 tablespoons ice-cold water
Directions
For the dough, place flour and salt in a food processor bowl. Pulse a few times to mix.
Add cold butter cubes. Pulse 8-10 times until butter resembles small clumps.
Turn the machine on and add four tablespoons of ice-cold water in one-tablespoon increments.
Let it run until it forms a ball.
Transfer it onto a lightly floured surface. Form it into a 4-inch disk and wrap it in plastic. Place in the fridge for at least an hour before rolling it out.
Preheat the oven to 350 degrees F.
Line a rimmed baking sheet with parchment paper. Set aside.
Heat olive oil in a large skillet over medium heat. Add the onion and cook, stirring frequently, until lightly browned, 20-25 minutes.
Mix apple slices, maple syrup and thyme in a small bowl.
Roll out galette dough into a 12-inch circle. Transfer it onto the prepared baking sheet.
Spread the caramelized onion over the galette, leaving 2-inch border.
Evenly distribute the apple slices and Crumbled Treasure Cave Blue Cheese over the onion. Sprinkle it with walnuts.
Roll the sides of the dough, overlapping as you go around and pleating the dough. Brush the edges with the egg.
Bake in the oven for 40 minutes or until the crust turns golden brown.
