Spinach and Gorgonzola-Stuffed Halibut

Ingredients

For the filling:

  • 1 ounce chopped, frozen spinach (thawed with the liquid squeezed out)
  • 2 tablespoons Treasure Cave Crumbled Gorgonzola Cheese
  • 2 ounces cream cheese (room temperature)

For the halibut:

  • 3 halibut filets
  • 1 teaspoon olive oil
  • Half teaspoon paprika
  • Quarter teaspoon garlic powder
  • 3 tablespoons butter
  • Salt and pepper to taste

Directions

  1. Combine the spinach, Treasure Cave Crumbled Gorgonzola Cheese and cream cheese in a mixing bowl. Set aside.
  2. Preheat your oven to 400 degrees F.
  3. Pat the halibut filets dry with a paper towel.
  4. Using a sharp knife, carefully cut a pocket into the side of each filet and stuff each pocket with the Gorgonzola filling.
  5. Coat the halibut filets with olive oil and place them in an oven-safe pan. Season with salt and pepper to taste.
  6. In a small bowl, combine the paprika and garlic powder and sprinkle it evenly over the filets. Top each filet with 1 tablespoon of butter.
  7. Bake until halibut it is just opaque and it flakes when cut with a fork, about 10-15 minutes depending on the size of your filets.
