Spinach and Gorgonzola-Stuffed Halibut

Ingredients
For the filling:
1 ounce chopped, frozen spinach (thawed with the liquid squeezed out)
2 tablespoons Treasure Cave Crumbled Gorgonzola Cheese
2 ounces cream cheese (room temperature)
For the halibut:
3 halibut filets
1 teaspoon olive oil
Half teaspoon paprika
Quarter teaspoon garlic powder
3 tablespoons butter
Salt and pepper to taste
Directions
Combine the spinach, Treasure Cave Crumbled Gorgonzola Cheese and cream cheese in a mixing bowl. Set aside.
Preheat your oven to 400 degrees F.
Pat the halibut filets dry with a paper towel.
Using a sharp knife, carefully cut a pocket into the side of each filet and stuff each pocket with the Gorgonzola filling.
Coat the halibut filets with olive oil and place them in an oven-safe pan. Season with salt and pepper to taste.
In a small bowl, combine the paprika and garlic powder and sprinkle it evenly over the filets. Top each filet with 1 tablespoon of butter.
Bake until halibut it is just opaque and it flakes when cut with a fork, about 10-15 minutes depending on the size of your filets.
