Ingredients
- 2 cups yellow potatoes, diced
- 2 cups red potatoes, diced
- 2 cups sweet potato, peeled and diced
- 1 cup onion, diced
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 tablespoon Italian seasoning
- 4 ounces (1 cup) Treasure Cave® Crumbled Gorgonzola Cheese
- Salt, to taste
- Pepper, to taste
Directions
- Preheat the oven to 400oF and line a large roasting pan with foil.
- Toss the potatoes, onion, garlic and oil together to combine. Then, sprinkle with the seasoning and mix well.
- Bake for 45 minutes to an hour, stirring every 15 minutes. Then, toss with the Treasure Cave® Crumbled Gorgonzola Cheese and season with salt and pepper to taste. Serve hot.
