Spicy Queso Dip with Blue Cheese

Ingredients
3 cups freshly shredded sharp cheddar cheese
1 tablespoon cornstarch
1 tablespoon butter
3 minced garlic cloves
¼ cup finely chopped white onion
1 finely diced jalapeño pepper
1 cup finely diced tomato
2 cups milk
½ teaspoon smoked paprika
½ teaspoon sazón
¼ teaspoon onion powder
¼ teaspoon garlic powder
⅛ teaspoon cumin
⅛ teaspoon ground cayenne pepper (optional)
1 4-ounce can chopped green chiles
¼ cup finely chopped cilantro
Salt to taste
2 tablespoons Treasure Cave Crumbled Blue Cheese
2-3 sprigs cilantro for garnish
Directions
Place cheddar cheese and cornstarch in a bowl and toss to coat.
Melt butter over medium heat in a large skillet.
Add garlic, onion and jalapeño. Cook for a few minutes until fragrant and onion is translucent.
Add tomato with its juices and cook for a few minutes until tomato is softened.
Add evaporated milk and cheddar cheese. Stir until cheese melts and mixture becomes smooth.
Add spices and stir in Treasure Cave Crumbled Blue Cheese and cilantro.
Add 2 tablespoons of milk to adjust the consistency and add salt if needed. Keep in mind that the dip will thicken when it cools.
Remove from heat. Serve warm and enjoy.
