Roasted Pear and Prosciutto Blue Cheese Dip

Ingredients

  • 5 ounces prosciutto
  • 1 large pear, sliced
  • Olive oil
  • 1 8-ounce brick cream cheese, softened
  • ½ cup sour cream
  • 1 cup mayonnaise
  • ⅛ teaspoon ground cardamom
  • ⅛ teaspoon ground nutmeg
  • Salt and pepper
  • 1½ cups Treasure Cave Crumbled Blue Cheese
  • 1½ cups fontina cheese, shredded
  • 1 cup Parmesan cheese, shredded
  • Thyme, chives, parsley for garnish

Directions

  1. Heat oven to 400 degrees F and lay prosciutto out on a parchment-lined baking sheet. Bake for 6 minutes, flip and bake another 5-6 minutes.
  2. Remove to a plate to cool and then crumble. Heat to 450 degrees F and bake pear slices with a drizzle of olive oil for 10- 15 minutes. Flip when they start to brown and cook another 5 minutes. Set aside to cool.
  3. Heat oven to 350 degrees F.
  4. Using a hand mixer, combine cream cheese, sour cream and mayonnaise with seasonings.
  5. Add Treasure Cave Crumbled Blue Cheese and fold to combine.
  6. Add two-thirds of the pears and prosciutto and fold again. Place in a baking dish or deep-dish pie dish (8x8 inches) and bake at 350 degrees F for 30 minutes.
  7. Top with remaining pears, prosciutto, additional Treasure Cave Crumbled Blue Cheese and fresh herbs. Bake for another 5-10 minutes or until bubbling.
  8. Serve with crostini (see step 9 if you want to make them yourself).
  9. To make crostini, slice a baguette thinly and layer on a baking sheet. Brush with oil or butter. Put the baking sheet under broiler and let slices get toasty. You can flip them to toast both sides if desired.
