Cut pork shoulder to 2-3 pieces and rub barbecue seasoning all over it.
In an instant pot, pour a quarter cup of water and add the seasoned pork. Seal the Instant Pot and cook on high pressure for 50 minutes.
Preheat the oven for 350 degrees F.
Place wonton wrappers on a baking sheet or cutting board. Brush both sides with neutral cooking oil.
Place the wonton wrappers into a muffin pan. Gently lay the wonton wrappers on top of the muffin hole and press down the middle.
Bake the wonton wrappers alone for 6-7 minutes. Remove from the oven. The top edges should be slightly browned.
Once the pork is done, quick release the Instant Pot.
You can either use two forks or a hand mixer to shred the pork.
Add 2 cups of pork in a mixing bowl.
Add half a cup of the Treasure Cave Crumbled Blue Cheese and barbecue sauce into the mixing bowl. Mix together.
Scoop 1-2 tablespoons of pork mixture into the wonton cups. Gently press the pork to fill the wonton cups. Sprinkle the rest of the Treasure Cave Crumbled Blue Cheese on top.
Bake for 15 minutes or until the wonton cup edges become golden brown.
Serve with scallions and more Treasure Cave Crumbled Blue Cheese on top if desired.
