Gorgonzola Gnocchi with Shrimp

Ingredients

  • 8 ounces of uncooked shrimp
  • 16-ounce package gnocchi
  • 2 tablespoons olive oil, divided
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • Half cup milk
  • Half cup Treasure Cave Gorgonzola cheese, crumbled
  • Quarter cup Parmesan cheese, grated
  • salt and pepper
  • chopped chives, for serving

Directions

  1. Bring a large pot of water to a boil.
  2. Cook gnocchi according to package instructions. Mine took about 2-3 minutes. Drain and set the gnocchi aside.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add shrimp and sauté for 3-4 or until the shrimp is no longer opaque. Remove shrimp from pan and set aside.
  4. Add remaining oil to skillet. Stir in onions and sauté for 3-4 minutes or until they start to soften and get some color.
  5. Add garlic and cook for 1-2 additional minutes.
  6. Stir in heavy cream and milk and simmer for 2-3 minutes, then add Gorgonzola and Parmesan cheese. Stir until the cheese has melted and the sauce is thickened.
  7. Season with salt and pepper to taste.
  8. Add the cooked gnocchi and shrimp and toss to coat.
  9. Serve immediately with fresh chives for garnish. Enjoy!
