Crumbled Blue Cheese
Ingredients
- 5 ounces (1 1/4 cups) Treasure Cave® Crumbled Blue Cheese, divided

2 cups farmers market veggies (carrots, peppers, zucchini, etc.), diced

1/4 cup mayonnaise

1/2 cup seasoned rice vinegar
-
1 teaspoon honey
-
1 tablespoon fresh ginger, grated

1/2 teaspoon lemon pepper
-
1 tablespoon fresh basil, chopped
- Tortilla chips
Directions
Remove 1 tablespoon Treasure Cave® Blue Cheese; set aside.
Combine vegetables in a medium bowl. In a small bowl, whisk together mayonnaise, vinegar, honey, ginger, and lemon pepper and pour over veggies. Refrigerate two hours or more. When ready to serve, toss in basil and remaining Treasure Cave® Blue Cheese. Place in serving bowl and top with reserved tablespoon of Treasure Cave® Blue Cheese.
