Dirty Martini Pasta with Mild Blue Cheese

Ingredients
8 ounces pasta
2 large yellow onions, thinly sliced
1 bulb garlic
¼ cup extra-virgin olive oil
2 tablespoons balsamic vinegar
Salt and pepper to taste
¼ cup crème fraîche
½ cup Treasure Cave Mild Crumbled Blue Cheese
½ cup sliced olives
Juice and zest of half a lemon
Directions
Preheat oven to 400 degree F.
In a baking dish, add onions and season with salt and pepper.
Drizzle with extra-virgin olive oil and balsamic vinegar, then toss to combine.
Place a whole garlic bulb in center of dish, drizzle with olive oil and sprinkle with salt.
Cover baking dish with aluminum foil and bake for 1 hour.
While onions and garlic are baking, cook spaghetti al dente according to package instructions. Reserve some pasta water for later.
Once onions and garlic are done, remove baking dish from oven. Set garlic bulb aside to cool.
Add crème fraîche, Treasure Cave Mild Crumbled Blue Cheese, lemon zest, olives and olive brine to onions in baking dish.
Squeeze cooled roasted garlic cloves into mixture and add cooked spaghetti. Toss well to combine.
If mixture is too thick, add a small amount of pasta water to loosen it.
Finish with a squeeze of fresh lemon juice and season with additional salt and pepper to taste.
Serve, garnishing with extra lemon zest and mild blue cheese crumbles. Enjoy!
