Crumbled Blue Cheese
Ingredients
- 4 Crispy Chicken Breasts
- 4 Brioche Buns, Toasted
- 4 Eggs, fried hard – or to your liking
- 1 Cup Blue Cheese dressing
- Cobb Salad Topping
- ½ Cup Treasure Cave Blue Cheese Crumbles
Crispy Fried Chicken Ingredients:
- 4 Boneless skinless Chicken Breasts
- 7 Cups All purpose Flour
- 3 Tbsp + 1 Tsp Seasoned Salt
- 3 Eggs
- 1 Qt Buttermilk
Blue Cheese Dressing Ingredients:
- 1 Cup Treasure Cave Blue Cheese Crumbles
- ¼ Cup Sour Cream
- ¼ Cup Mayonnaise
- ½ Cup Buttermilk
- 1 Tsp Lemon Juice
- 1 clove Garlic, minced or grated
- ¼ tsp Worcestershire Sauce
- ½ tsp Kosher Salt
- ½ tsp Black Pepper
Cobb Salad Topping Ingredients:
- 2 Avocados, peeled and diced
- 2 Roma Tomatoes, small dice
- 1 dash red wine vinegar
- 4 Pieces of Bacon, cooked crispy and rough chopped
- To Taste – Salt and Pepper
Directions
Blue Cheese Dressing:
1. Combine all Blue Cheese Dressing Ingredients in a small bowl and stir together to combine. Serve immediately or store, covered and refrigerated for up to 1 week.
Crispy Fried Chicken:
1. Preheat your oil to 325 degrees.
2. In a large bowl combine your flour with the 3 Tbsp seasoned salt.
3. Prepare your dredging station: Grab 1 additional bowl. Take 1 cup of the seasoned flour and add it to the bowl along with the eggs, buttermilk, and remaining tsp of seasoned salt. Whisk together to create your batter and set aside.
4. For craggy and crispy edges on your fried chicken slowly drizzle a 1/2 cup of batter over your flour and toss it in with a fork to coat. Then follow the procedure for breading the chicken below. This creates those super crunchy bits!
To Bread the Chicken:
1. Set your chicken on the counter, next to that set your flour and then your batter.
2. Take the chicken breasts and toss them in the flour mixture then dip in the batter and then place them back in the flour.
3. Take the breasts that are in the flour mixture and push the mixture into the wet chicken making sure the chicken in thoroughly coated, this will help you achieve the crust and crunch you are looking for.
Repeat this process with the remaining chicken.
4. Fry the chicken for about 15 minutes, turning occasionally until the chicken reaches an internal temperature of 165 degrees.
Cobb Salad Topping:
1. Combine all the ingredients in a bowl and mix together thoroughly, gently smashing some of the avocado as you mix. Season with Salt and Pepper to taste.
Assembly:
1. Top the bottom of your bun with the fried egg.
2. Place your chicken on top of the egg and then top the chicken with the Cobb Salad Topping.
3. Drizzle the chicken with Blue Cheese Dressing and top with additional blue cheese crumbles.
3. Top your sandwich with the top bun and enjoy!
**We have provided full recipes for all the components in this sandwich, but if you want to take a simpler approach you can buy frozen crispy chicken breasts, blue cheese dressing and 2 Cups of good quality guacamole (sub for avocados and tomato) and assemble as instructed.
