Chipotle Chicken Lettuce Cups with Mild Blue Cheese

Ingredients

  • 1½ pounds ground chicken
  • 1 tablespoon olive oil
  • 1 large shallot, minced
  • 2 garlic cloves, minced
  • 1 small jalapeno, minced
  • ¼ cup chipotle adobo sauce
  • Kosher salt and pepper to taste
  • Butter leaves for serving
  • Treasure Cave Mild Crumbled Blue Cheese for garnish
  • Chopped scallions for garnish

Directions

  1. Preheat a skillet on medium-high heat and add olive oil, ground chicken, kosher salt and pepper. Cook chicken until no longer pink, about 5 minutes.
  2. Next, add shallot, garlic and jalapeno. Continue to cook for another few minutes.
  3. Add chipotle adobo sauce and stir to combine.
  4. Remove skillet from heat.
  5. Place butter leaves on a serving platter. Spoon the chipotle chicken into each lettuce cup.
  6. Garnish with scallions and Treasure Cave Crumbled Mild Blue Cheese. Serve and enjoy.
