Butter Steak with Mild Blue Cheese Alfredo

Ingredients

Butter Steaks

  • Steaks of choice (I used sirloin or NY strip)
  • 3 tablespoons unsalted butter
  • 3-4 cloves crushed garlic
  • 2 sprigs fresh rosemary and thyme
  • Salt and pepper

Blue Cheese Alfredo

  • 1 pound spaghetti, fettuccine or bucatini pasta
  • 4 tablespoons unsalted butter
  • 1 handful or pint of bella mushrooms, sliced (optional)
  • 3-4 cloves of garlic, minced
  • 1½ cup heavy cream
  • ½ cup finely shredded Parmesan cheese
  • ¼ cup pasta water
  • ¼ cup Treasure Cave Mild Crumbled Blue Cheese
  • Garnish with fresh parsley, bacon and more mild blue cheese crumbles

 

Directions

  1. If you are using bacon, cook to package instructions. Once finished, drain grease on a paper-towel-lined plate, chop and reserve for garnish. This recipe also works great with prosciutto.

Butter Steak

  1. Start by seasoning room temperature steak with salt and pepper on both sides.
  2. Add butter to a well-oiled and piping-hot large skillet. Add steak and sear for 3-4 minutes until a nice crust has formed. Flip over and add herbs. Cook for 3-4 more minutes.
  3. Continue to cover steak with melted butter using a spoon.
  4. Once cooked to desired doneness, remove steak from pan and put it on a plate. Let steak rest for about 5-7 minutes and slice if desired. Reserve rest of butter for Alfredo sauce.

Blue Cheese Alfredo

  1. Add remaining butter and optional mushrooms to pan.
  2. Add garlic and sauté for about 3 minutes. Add cream and stir until butter is no longer visible.
  3. Add parmesan and Treasure Cave Mild Crumbled Blue Cheese. Mix until creamy and add salt and pepper to preference.
  4. While Alfredo is finishing, cook pasta to package instructions. When pasta is cooked, drain and reserve pasta water to incorporate with the Alfredo sauce.
  5. Once Alfredo sauce has thickened, toss with drained pasta.
  6. Add pasta, steak and any other sides to a plate. Garnish with bacon (optional), fresh parsley and Treasure Cave Mild Crumbled Blue Cheese. Enjoy.

Tips: Everyone likes their steak cooked a certain way. Here are some cook times.

  • Rare: Cook for 2–3 minutes per side.
  • Medium-rare: 3–4 minutes per side.
  • Medium: 4–5 minutes per side.
  • Well-done: 4–5 minutes per side, reduce heat and cook for about another 2–3 minutes or longer if desired.
