Buffalo Chicken Eggrolls with Mild Crumbled Blue Cheese

Ingredients

  • 15 egg roll wrappers
  • 16 ounces shredded cooked chicken breast
  • 8 ounces softened cream cheese
  • ½ cup Treasure Cave Mild Crumbled Blue Cheese
  • 4 ounces shredded cheddar cheese
  • ½ cup Buffalo sauce
  • 1 tablespoon ranch seasoning
  • 2 finely diced green onions, finely diced
  • Water, to seal the egg roll wrapper
  • Oil to fill the bottom of the pan 1½ - 2 inches

Directions

  1. Combine chicken, cream cheese, Treasure Cave Mild Crumbled Blue Cheese, cheddar cheese, green onions and ranch seasoning in a bowl.
  2. Add Buffalo sauce and combine.
  3. Lay out one egg roll wrapper on a cutting board with a point facing toward you so it looks like a diamond.
  4. Add a large scoop of Buffalo chicken filling to bottom half of egg roll wrapper. Fold bottom corner over filling and then add water along the edges that are still on the cutting board.
  5. Fold over side corners toward the middle and then roll egg roll wrapper up toward top corner.
  6. Repeat with remaining egg roll wrappers. Lay egg rolls on a baking sheet.
  7. Heat oil in a large shallow pan on medium heat.
  8. Working in batches, cook egg rolls on both sides until they are golden brown.
