Bacon & Blue Cheese Spinach Dip

 

 

Ingredients

  • 2 T Olive Oil  
  • 1 med Onion, small dice  
  • 3 cloves Garlic, minced or grated 
  • 12 oz frozen spinach, defrosted and liquid squeezed  
  • 12 oz Cream Cheese, softened  
  • ¾ Mayonnaise
  • 2/3 C Sour Cream  
  • 1 t Dijon Mustard  
  • 2/3 C Crumbled Bacon
  • 2/3 C Mozzarella Cheese  
  • 1 C Blue Cheese
  • 3 scallions, sliced thin 
  • TT Salt & Pepper  

Directions

  1. Preheat oven to 400 degrees. 
  2. Add olive oil to a medium sauté pan and cook onions and garlic until soft, about 5 minutes. Set aside to cool. 
  3. Cream together softened cream cheese, sour cream, Dijon and mayo.  Add remaining ingredients including the sauté and mix until well combined.   Place in an oven safe, bakeable dish and bake for 20 minutes or until hot and bubbly.
