1 wedge of Treasure Cave Gorgonzola Blue Cheese cut into pea-size cubes
10 large chopped pimento-stuffed olives
10 large whole pimento-stuffed olives
1 quart vegetable oil
½ cup Treasure Cave Gorgonzola blue cheese crumbles
Directions
Add 2 inches of oil to a medium-sized pot. Heat to 365 degrees F, using a thermometer to check.
Whisk dry ingredients together in a large bowl.
Add buttermilk to dry ingredients. Crack eggs into a measuring cup and whisk. Add eggs to the buttermilk and dry ingredients mixture.
Add olives, butter and Treasure Cave Gorgonzola cheese. Mix to combine. Make sure all flour is mixed into the batter but do not over-mix.
To make hush puppies: Get a sheet pan with a grid inside it and put double paper towels on it. Spray a small cookie scoop with oil and scoop batter into oil, making sure not to crowd the pan. Do this swiftly so that they cook evenly.
Cook hush puppies for about 2-3 minutes, using a slotted spoon to move them around and allow them to turn over. Check hush puppies for doneness in the middle by cutting one open.
Drain on the paper towels, sprinkling with a little salt while hot. Continue to do this, keeping the hush puppies warm in a 300-degree F oven.
To serve: Place in serving dish. Top with Treasure Cave Gorgonzola Cheese Crumbles and additional olives. Add skewers to some of the olives and hush puppies. Serve in mini martini glasses.
