Arizona Blue Cheese & Steak Tacos

Ingredients

  • 12-ounce steak, cut into bite-sized pieces and seasoned to your liking with salt, pepper, cumin, garlic and onion powder
  • 1 small white onion, diced
  • 5½ ounces Treasure Cave Blue Cheese Wedge (you can also use Treasure Cave Crumbled Blue Cheese)
  • 6 small flour tortillas
  • Steak seasoning: Salt, pepper, cumin, garlic powder, onion powder (to taste).
  • Additional toppings: more diced onions, diced tomatoes, fresh lemon, cilantro or parsley

Directions

  1. In a medium skillet, season and cook steak until browned.
  2. Add onion to pan and cook until translucent.
  3. Toast tortillas for 1-2 minutes each side.
  4. To assemble, place 2 tablesapoons of steak filling in the center of tortilla then sprinkle Treasure Cave Crumbled Blue Cheese on top. I cut up the Treasure Cave Blue Cheese Wedge so I got pieces to my liking, but you can also use Treasure Cave’s Crumbled Blue Cheese.
  5. Garnish with fresh onions, diced tomatoes, a squeeze of fresh lemon and cilantro
