BLT Bruschetta Dip

Ingredients

3.5 ounces (about 1 cup) Treasure Cave® Crumbled Goat Cheese, divided

1 tablespoon butter

1/2 cup finely diced shallot

1 tablespoon balsamic vinegar

1 cup sour cream

Salt and pepper, to taste

1/2 cup shredded romaine lettuce

4 slices bacon, sliced thin and cooked crisp

1/3 cup bruschetta tomatoes

Garlic crostini

Directions

Remove 1 tablespoon Treasure Cave® Goat Cheese; set aside.

Heat butter in a medium skillet over medium-high heat. Add shallot, and sauté, stirring frequently until brown and caramelized, 5 to 7 minutes. Stir in vinegar and remove from heat. Stir in sour cream, and remaining Treasure Cave® Goat Cheese. Season with salt and pepper. Spread in a shallow bowl, and layer with bacon, lettuce and bruschetta tomatoes. Sprinkle with reserved tablespoon of Treasure Cave® Goat Cheese and serve with crostini.
