Turkey Sandwiches with Shallots, Blue Cheese and Cranberries

Ingredients

2 tablespoons extra virgin olive oil
1 cup shallots, thinly sliced
Salt
1 cup Treasure Cave® Crumbled Blue Cheese
3 tablespoons sour cream
8 slices multigrain bread
8 slices smoked turkey breast
4 romaine lettuce leaves
½ cup cranberry sauce, jellied type

Directions

Heat a small skillet over medium-high heat. Add the oil and swirl to coat. Add the shallots and reduce the heat to medium-low. Sauté for 5 minutes and reduce the heat to low. Sauté for 10 more minutes or until shallots are soft and brown. Add salt to taste. Remove from heat.
 
In a small bowl, combine the blue cheese and sour cream until smooth. Spread the cheese mixture over 4 bread slices. Top the cheese mixture with grilled shallots, turkey slices and lettuce leaves. Spread cranberry sauce on remaining 4 bread slices and place on top of turkey slices. Press sandwiches lightly to compact.
