Tomato, Feta and Quinoa Salad

Ingredients

3 cups cooked quinoa, cooled
1 cup cherry tomatoes, halved
½ red bell pepper, diced
½ cucumber, seeded and diced
½ cup Treasure Cave® Crumbled Feta Cheese
2 tablespoons fresh chives, finely chopped
2 tablespoons fresh parsley, finely chopped
2 tablespoons fresh mint, finely chopped
Treasure Cave® Crumbled Feta Cheese for garnish
 
For the dressing:
3/4 teaspoon garlic powder
3/4 teaspoon dried oregano
3/4 teaspoon dried basil
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon Dijon-style mustard
1/3 cup plus 1 tablespoon red wine
Vinegar
1/4 cup plus 2 teaspoons extra virgin olive oil

Directions

To make the dressing: Whisk together the dressing ingredients except for the olive oil until combined. Gradually whisk in oil until well blended.
 
In a large bowl, toss together all of the non-dressing ingredients until combined. Drizzle with the dressing and toss gently to coat. Garnish with crumbled feta cheese. Serve chilled or at room temperature.
