Southwest Chicken and Blue Cheese Salad

Ingredients

2 cups diced rotisserie chicken

1 small red bell pepper, diced

1 cup canned black beans, drained and rinsed
1 cup cooked sweet yellow corn
1 cup cherry tomatoes, halved
2 scallions (green and white parts), finely chopped
½ bunch cilantro, finely chopped
1 avocado, diced
½ cup Treasure Cave® Crumbled Blue Cheese
4 cups chopped romaine lettuce
Treasure Cave® Crumbled Blue Cheese for garnish
Fresh juice from lime wedges for garnish
 
For the dressing:
½ cup ranch dressing
½ cup store-bought barbecue sauce

Directions

To make the dressing: Combine the ranch dressing and barbeque sauce until blended.
 
Place all of the salad ingredients in a large bowl. Pour the dressing over the top and gently toss until combined. Garnish with crumbled blue cheese. Squeeze lime juice on top of salad before serving.
