6 ounces red pears
6 ounces peaches
6 ounces mango
6 ounces kiwi
6 ounces raspberries
6 ounces blackberries
½ cup honey
⅛ teaspoon salt
½ cup water
½ cup hot water
3 sprigs mint
½ jalapeño, seeded and diced
4 ounces Treasure Cave® Crumbled Goat Cheese
Slice the pears, peaches, mango and kiwi to your personal preference and add them to a mixing bowl. Then, add the raspberries and blackberries to the same bowl.
Squeeze the juice of the lime over the fruit, toss to coat everything and refrigerate it until it’s chilled.
In a saucepan, combine the honey, salt, water, mint and jalapeño. Bring it to a simmer over medium-high heat. Then, reduce it by half, until the sauce is thick, 3–5 minutes. Remove it from the heat and bring it to room temperature.
To serve, plate the fruit and drizzle heavily with the honey sauce. Then, top it with the Treasure Cave® Crumbled Goat Cheese.
Tip: Serve this in a tall vessel, like a martini glass, and add a little sauce to the bottom before adding the fruit. Layer the cheese in between the scoops of fruit.
