1 tablespoon olive oil
2 cloves garlic, minced
2 cups boneless, skinless rotisserie chicken breast, shredded
1 1/2 cups green chile verde sauce
1/2 cup mayonnaise
4 ounces (1 cup) Treasure Cave® Crumbled Feta Cheese, divided
2 tablespoons cilantro, chopped
Salt, to taste
Pepper, to taste
Heat the oil in a medium skillet over medium-high heat and sauté the garlic until fragrant, about 2–3 minutes. Then, add the chicken, verde sauce and mayonnaise and stir to combine.
Set aside 1/4 cup of the Treasure Cave® Crumbled Feta Cheese and add the remaining 3/4 cup of the Treasure Cave® Crumbled Feta Cheese to the skillet. Cook until well blended and hot, stirring frequently.
Remove the mixture from the heat, stir in the cilantro and season with salt and pepper. Then, pour it into a heat-safe dish and sprinkle with the reserved 1/4 cup of the Treasure Cave® Crumbled Feta Cheese.
Serve immediately with tortilla chips.
