1/4 cup red onion, thinly sliced
1/4 cup red pepper, thinly sliced
1/2 cup white vinegar
1 tablespoon sugar
1 teaspoon salt
1 pound ground turkey
4 ciabatta rolls, cut in half
1/2 cup salsa verde
1/2 cup Treasure Cave® Crumbled Feta Cheese, divided
1 avocado, diced
In a small bowl, combine the onion, red pepper, vinegar, sugar and salt. Cover and let the mixture stand at room temperature for 1 hour or more.
Form the turkey into 4 patties. With your thumb or the back of a spoon, make a shallow indentation about 1 inch wide in the center of the patties to prevent them from forming a dome as they cook. Oil and prepare the grill for medium direct heat.
Grill the burgers for 8–10 minutes, until fully cooked, turning once. Toast the rolls, cut side down, on the grill for 30 seconds to 1 minute.
To assemble the burgers, place the roll bottoms on a serving plate. Spread each with 1 tablespoon of the salsa verde. Then, sprinkle with 1 tablespoon of the Treasure Cave® Crumbled Feta Cheese and top with the burger. Top with the remaining salsa verde, diced avocado, pickled onion mixture, and remaining Treasure Cave® Crumbled Feta Cheese, and cover with the roll top.
