16 ounces ground pork
8 ounces fresh Italian sausage
8 slices sourdough bread
1/2 cup mayonnaise
1 teaspoon red curry paste (or more to taste)
1/2 cup Treasure Cave® Crumbled Blue Cheese
1 cup broccoli slaw, coarsely chopped
In a medium bowl, combine the pork and sausage and mix well. Form into 4 patties. With your thumb or the back of a spoon, make a shallow indentation about 1 inch wide in the center of the patties to prevent them from forming a dome as they cook. Oil and prepare the grill for medium direct heat.
Grill the burgers for 8–10 minutes, until fully cooked, turning once. Then, toast the bread slices, 30 seconds per side.
Meanwhile, in a small bowl, combine the mayonnaise and red curry paste. Mix well and set aside.
To assemble the burgers, place 4 slices of the grilled bread on a cutting board. Spread each with 1 tablespoon of the red curry mayonnaise. Then, sprinkle each with 1 tablespoon of the Treasure Cave® Crumbled Blue Cheese. Divide the broccoli slaw evenly on each slice. Place the burgers on top and add a dollop of red curry mayonnaise. Sprinkle each with the remaining Treasure Cave® Crumbled Blue Cheese and place the remaining bread atop.
