Holiday Pork Stew with Feta

Ingredients

  • 2 pounds pork shoulder or center-cut loin, cut into 1-inch cubes 
  • 12 ounces verde sauce 
  • 2 cups potatoes, diced 
  • 15-ounce can cannellini beans 
  • 4 ounces (1 cup) Treasure Cave® Crumbled Feta Cheese, divided 
  • Salt, to taste 
  • Pepper, to taste 
  • 2 strips bacon, cooked crisp and crumbled 
  • 1/4 cup panko 

Directions

  1. Preheat the oven to 400oF. 
  2. In a saucepan, combine the pork, sauce and potatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes. Add the beans and 3/4 cup of the Treasure Cave® Crumbled Feta Cheese and cook for 15 minutes more. Then, season with salt and pepper to taste. 
  3. Pour the mixture into a decorative oven-safe dish and sprinkle with the bacon, panko and remaining 1/4 cup of Treasure Cave® Crumbled Feta Cheese. Bake for 10 minutes and serve hot.
