Gorgonzola Veggie Burger

Ingredients

  • 1/4 cup mayonnaise
  • 2 teaspoons lemon juice
  • 3/4 cup Treasure Cave® Crumbled Gorgonzola Cheese, divided
  • 1 tablespoon olive oil
  • 1/2 cup orange pepper, thinly sliced
  • 1/2 cup yellow onion, thinly sliced
  • Salt and pepper
  • 4 veggie burgers
  • 4 English muffins, toasted
  • 1 avocado, sliced into 12 slices

Directions

  1. In a small bowl, combine the mayonnaise, lemon juice and 1/4 cup of the Treasure Cave® Crumbled Gorgonzola Cheese. Mix well and set aside.
  2. In a non-stick skillet, heat the olive oil over medium-high heat. Add the peppers and onion and sauté until soft. Then, season with salt and pepper and set aside.
  3. Grill the veggie burgers according to the package directions.
  4. To assemble the burgers, place the English muffin bottoms on a serving plate. Spread each with the gorgonzola mayonnaise. Then, top with the pepper onion mixture, followed by a burger. Top each with 3 slices of avocado and sprinkle with the remaining Treasure Cave® Crumbled Gorgonzola Cheese. Place the muffin tops upon each and serve warm.
